Green Ohio: Vegan Bakery

"I'm a sweets fanatic, always have been," said Pattycake Bakery owner Jennie Scheinbach. "I've always baked as a kid."
Scheinbach is living out her dream with a twist at her bakery in the Columbus Clintonville neighborhood.
"We're not using butter, we're not using eggs, we're not using milk," said Scheinbach. "It is healthier. We are using whole grains, we are using organic, we are vegan, but we're also tasty."
The Pattycake Bakery weaves a sustainable theme into its entire business operation. After the cookies are baked, any extra scraps are composted.
"We throw away in the trash less than one household container a week," said Scheinbach.
Everything, down to the cookie packaging and labels, is environmentally friendly and contains no animal products.
"The way you treat your body today matters in the future," said Scheinbach.
